Banana Muffins

• 1 ½ cups flour
• 2 tsp baking powder
• ½ tsp soda
• ½ tsp salt
• ½ tsp cinnamon

• 4 tbls honey
• ½ cup Second Nature Eggs
• ½ cup non-fat plain yogurt
• 2 large ripe bananas, mashed

Combine dry ingredients in a meduim bowl and set aside. Combine all other ingredients in another bowl. Add the dry ingredients and mix well. Pour into muffin pan that has been sprayed with non-fat spray. Bake at 400° for about 25 minutes. Makes about 3 dozen small muffins.
